One of my all time favorite things about summer is experimenting with different salad recipes. There’s nothing more refreshing than a flavorful, cold, salad on a hot summer day. As a kid, my mother made a salad to go along with dinner every night. Each one she made was different. She always said, “an extravagant salad is the perfect compliment to any meal”. Now that I’m living on my own, I’ve adapted this into my adult life and have been testing out countless types of salads. I’ve listed a few of my favorites below for you all to try out.
Cantaloupe Mozzarella Caprese
The ingredients in this salad compliment each other effortlessly; almost as if they were meant to be tossed together. It’s shocking how only four ingredients cantaloupe, mozzarella, prosciutto, and basil, can create something so flavorsome. Dress the salad with a few tablespoons of extra-virgin olive oil, salt and pepper, a squirt of lemon and you’re done!
Pear and Blue Cheese Salad
This is the ideal salad to pear with an elaborate steak dinner. It’s the perfect combination of sweet and savory. This salad is filled with pears, blue cheese, candied walnuts, craisins, and iceberg lettuce. Drizzle it with some balsamic reduction to top it off!
Strawberry Spinach Salad
It’s super important to utilize all the delicious strawberries in the summer season. This salad will be a hit for any age group and it’s the perfect way to trick little kids into eating spinach. I like to make my own dressing for this salad. Before throwing in the main ingredient I whisk together oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. The sugar will really make the flavor of the strawberries pop. The entire ensemble is mouth-watering.
